GREEN MUFFINS
NEED A BREAKFAST MAKEOVER? Or awesome snack for your babies/kiddos?
Healthy "GREEN" Muffins are my absolute go to when I am so bored with my eggs and grapefruit breakfast, plus JP loves them! Win Win!
2 cups raw gluten-free rolled oats
A handful of blueberries or strawberries (or a banana if ok on your list of foods)
2 handfuls of spinach
2 eggs
1 tsp of baking soda
1 tsp of cinnamon
1/4 tsp of sea salt
1-2 tablespoons of liquid stevia (Stevita) or 1/8-¼ tsp powdered stevia (Nu Naturals) or monk fruit (not equal with sweetness of stevia)
1/2 tsp of vanilla
1/4 cup melted raw unrefined coconut oil
a splash of apple cider vinegar
1/4 cup of plain unsweetened almond milk/or nut milk of your choice
(can add 1/4 cup of protein or collagen powder to add that to your morning boost)
Preheat oven to 350 degrees F. Spray muffin tins with coconut oil or avocado oil spray or line with paper liners. Put all ingredients in your blender. Be sure to put the liquid items in first on the bottom. Blend until smooth. You may blend one or two items at a time and keep adding each ingredient and blending until all ingredients are blended. Scoop or pour from blender into muffin tins. Bake for 18 minutes or until a toothpick inserted into the center is clean.
I bake mine for about 16 minutes so they are soft inside for reheating later.
